Butter Chicken.

Ingredients:
- 1/2 kg Chicken (boneless or bone-in).
- 1 Tsp (tea spoon) of lemon juice.
- 1/4 Tsp of salt.
- 1/2 Tsp of Redchilli powder or paprika.
- 1/4 Tsp of Kasuri methi crushed or powdered.
- 2 pinches of Haldi (turmeric).
- 1 Tsp of garam masala powder.
- 1 Tsp of oil.
- 1 Tsp of ginger garlic paste for marination.
- 1/2 Tsp of hung yogurt (Greek yogurt)
- 2 Tsp of butter.
- 1 tsp of ginger garlic cooking paste.
- 2 inch of cinnamon.
- 2 green cardamoms.
- 1 pinch fenugreek seeds powder or methi.
- 2 green chilies slit
- 4 large tomatoes (pureed in the blender and filtered to remove skin and seeds).
- 1 Tsp of red chili powder(set according to your taste and color).
- 10 cashew nuts or soaked almonds.
- 1/4 Tsp of sugar.
- 100 ml of chilled cream.
- coriander leaves for garnishing.
Preparation for butter chicken recipe:
Wash chicken under running water and pat dry.First marinate with lemon juice,chili powder salt for 15-20 minutes.then marinate again with yogurt,Kasuri methi,oil,turmeric,ginger garlic paste and garam masala powder.Refrigerate for a least 3-4 hours.soak almonds or cashews for 1 hour.remove the skin and make a smooth paste with little water.you can also make it like thick milk.Puree the tomatoes and set aside.also make the ginger garlic paste.
Procedure for making butter chicken recipe:
Grill the chicken in an oven stove or stove top.For stove top method ,add one tsp butter and add the marinade.Fry on high flame till all the moisture evaporates.keep stirring constantly to prevent burning.cook till it is cooked.transfer this to a plate and set aside.To grill it in oven,preheat the oven to 240 C for at least 20 minutes.Grill it until meat is cooked well.it may take about 20-30 minutes depending on the size of your chicken chunks.Heat a pan with butter.add cinnamon,cloves and cardamoms.Fry for a minute or two.Add ginger garlic paste,green chilies and fry till it turns fragrant.
then,pour the tomato puree.add red chili powder,sugar and salt.mix and cook until tomato puree becomes hick.it also begin to leave the sides of pan.Pour one cup water.add methi powder ,cashew or almond paste.add more or less water to suit your desired consistency.bring the mix to a boil and simmer for about 5-7 minutes.the chicken should become soft and tender.add gram masala and Kasuri methi.stir and simmer for about 3-4 minutes.pour chilled cream and switch of the stove.
Garnish butter chicken with coriander leaves and extra cream if desired.serve with long grain rice or naan or pratha.
